Hi,

August has been full of summer heat, smells, noises and activities! Here where I live, the hills have been alive this week with the thunder of motorcycles going to Sturgis Motorcycle Rally. Rally time is a sign that summer has been here, but is quickly on its way out. Summer in the Black Hills of South Dakota is slow in arriving, stays briefly and flies away fast!

So far this summer, I've gotten 3 rounds of green beans and cucumbers from my organic heirloom garden. I'm excited for the coming tomatoes, corn, carrots, beets and melons! There's nothing like eating your own home grown food!

My family has also been working hard renovating our historical house, and we have finally taken time to enjoy BBQ's and visiting with family and friends.

Last night, my daughter and I took a late night walk under the clear star filled sky. The weather was perfect, and I don't want it to end!

I imagine you have been enjoying some of the same types of activities. However, if you are like my family, you have a very long to do list and it's hard to take time to relax. I've learned the hard way that it's important to recharge your mind, body, spirit and soul. I encourage you to take time to breath, relax and spend time with loved ones.

In this newsletter, I'm going to share my UNexact cucumber recipe along with a few food links I think you'll find of interest.

Cucumber Dill Salad

These amounts are only approximate. Fine tune your recipe to your own taste buds!
  • 3-4 sliced small to medium cucumbers
  • 3/4 to 1 cup Vegenaise or organic mayo or sour cream product of your choice (all depends on your amount of cucumber)
  • 1/4 cup organic almond milk or soymilk (or other milk product)
  • several chopped sprigs of fresh dill (can also use dried)
  • 1 tablespoon raw apple cider vinegar
  • 1-2 teaspoons sucanat or other natural sweetener (sweeten to taste)
  • sliced red or white onion if desired
  • several pinches of salt
  • pepper to taste

Slice cucumbers and onions and place in bowl. Mix Vegenaise, milk, apple cider vinegar, sucanat and seasonings together. Pour dressing mixture over cucumbers, stir, cover and chill. Enjoy!
