Broccoli Salad Recipe with a Sweet Surprise!

Broccoli Cranberry Surprise Salad This just might become your favorite broccoli salad recipe. It's one with a cranberry surprise.
Ingredients: - 1/2 a head of broccoli chopped fairly fine with a food processor
- 2 apples cut in small chunks
- 5-6 handfuls of chopped spinach
- 1 handful soaked almonds finely chopped in food processor
- 1/2 handful soaked pecans if desired
 - 2-3 tablespoons of Nutiva hemp seeds
- 1/4 head of cauliflower diced small, not as small as the brocolli (My husband suggested I not chop it too fine because cauliflower can have a strong flavor. This turned out to be a great suggestion.)
- 1/3-1/2 cup of dried cranberries
Of course many of these measurements can be varied based on your likes.
Dressing: - 3/4-1 cup Vegenaise (Grapeseed oil version)
- 2 tsp fresh lemon juice
- 1-2 tablespoons ? almond milk (can add more if needed for consistency)
- 1/2 tsp. Sucanat or to taste (you may not find this necessary) Stevia would work great too!
Stir and add to broccoli mixture. Can make more dressing if the salad is too dry.
This is a great salad to get your greens. For those who aren't excited about greens, having them with the apples and the cranberries is a great way to make them more palatable. I thought this raw food broccoli salad recipe turned out great, and I will mark this one up as a keeper!
