Date Nut Torte...Sink Your Teeth into this Heavenly Raw Food Dessert
Before you try this amazing date nut torte recipe you might like to know a few little tidbits about dates. There are numerous species of dates. The most common kinds of dates are medjool, khadrawi, halawi, and thoory. For this recipe, I used medjool dates.
Dates are high in vitamin A, calcium, magnesium, phosphorus and potassium. They are also a good source of iron, zinc, copper, manganese, selenium, B vitamins and 20 different amino acids. Dates are a great nutritional way to sweeten your recipes.
This is one of my favorite raw food dessert recipes. It’s easy and quick. If you like fudgey, creamy and sweet, I think you’ll love this dessert.
Base of Torte:
2 cups raisins 2 cups walnuts (Raw nuts are best if you can find them.)
Frosting:
1 cup dates, pitted and soaked ½ lemon, juiced
For Base:
In a food processor, combine raisins and walnuts and blend until well blended and moist. (This will take a few minutes and you may see a ball forming. The mixture should look fudgey and not grainy.)
Remove from processor and mold onto a plate in a roundcircle about 1 ½ inches thick.
For Frosting:
In food processor, combine dates and lemon juice until smooth and creamy.
Spread the frosting on top of the torte.
This can be served at room temperature, or if you want it firmer and easier to slice, refrigerate it for a few hours.
