Sergei's Amazing Raw Truffles

A raw truffles recipe from Sergei and Valya Boutenko's book Eating Without Heating.
Ingredients:
- 1 cup unsoaked walnuts
- 1/2 cup of your favorite pitted dates
- 1/2 cup of young coconut water
- 4 tablespoons raw carob
- 1/2 teaspoon salt (sea or himalayan)
Directions:
Blend the walnuts and dates in a food processor till the mixture is smooth. Mix in the raw carob and coconut water. Shape the mixture into small balls and roll the balls in carob. Decorate with your favorite fruit.
Makes 8-12 servings.
Stash in the freezer.
